History

Blue cheese is made from cow's milk and was originally produced in caves where mold was naturally present. Blue cheese was most likey discovered by accident as cheese was stored in caves and they developed mold. This cheese was often considered ruined until somone tasted it and discovered how exquisite the tast had become.

Today, the mold is mixed into the milk after pasteurization. Each wheel is pierced which allows the mold to grow and develop veins throughout the wheel.
