Asiago cheese originated in Italy and can assume many different textures, according to its aging, from smooth for the fresh, to a crumbly texture for the aged Asiago cheese. In Italy, Asiago cheese has a protected designation of origin. The only "official" Italian Asiago is produced in the alpine area of the town of Asiago, province of Vicenza, in the Veneto region.

Today, most Asiago cheese found in the USA is domesticaly produced using cow's milk. An aged Asiago cheese is reminiscent of sharp cheddar and Parmesan

Product may be shipped/stored in temperatures between 33-55 degrees Fahrenheit for periods NOT TO EXCEED 72 hours. For shipping/storage of 72 hours of more, product must be refrigerated between 33-45 degrees Fahrenheit. Any deviations from these guidelines may affect the product quality/integrity.
